Recipe: Creamy Coconut Linguine

Funny enough I’m not a big fan of coconut, yeah I said it – you can pick your jaw off the floor now. Honestly I’ve just never really got the appeal. I do find that now I can appreciate it in (very) small doses, and especially in food it gives an added complexity to the flavour of even simple dishes.

For this dish I used coconut milk, and only a small bit given my uncooperative taste buds, so do feel free to add double or even triple what I used. I also add prawns and/or pancetta to just about every dish so you can skip these for a veggie option or just add your preferred protein.

What you’ll need

  • Linguine – 500g
  • Mixed peppers – 1 cup, chopped
  • Onions – 1/4 cup, chopped
  • Coconut milk – 1/2 cup (or more if you prefer)
  • Olive oil – 3 tablespoons
  • Curry powder – 1/2 teaspoon
  • Ginger – 1/2 teaspoon
  • Salt – 1/2 teaspoon
  • Chilli powder – 1/2
  • Stock cube – 1 cube
  • Pancetta (optional) – 65g
  • Prawns (optional) – 1/2 cup


  1. Bring a medium to large pot of water to the boil, this will be used for the pasta
  2. Heat up the olive oil in a separate large pot and add the onions, stir gently for a few seconds then add the mixed peppers, pancetta and prawns to fry for about 3 mins
  3. By this point the pot of water should be boiling, add a drop of olive oil and the salt to the water, then add the linguine. We will let this cook for 10-12 minutes, and prep the sauce in the meanwhile
  4. Going back to the large pot with the other ingredients, add the coconut milk. Season with the curry, ginger, chilli and stock cube and let the mix sit on low to medium heat for 5-10 mins while the pasta boils
  5. After the pasta has cooked for 10-12 mins, it should be al dente and ready to be mixed in. Drain the excess water and transfer the linguine to the sauce pot
  6. Mix well and let simmer for 1 or 2 minutes
  7. Dish and enjoy!
